I have a Specialized Demo 9 DH

and i need to replace my brakes,

When i look at brakes to get they list

160mm
185mm
203mm

What ones are the correct ones to pick?

I'm not really sure

those are rotor diameters, go with 203 for dh

I'm sub 70kg and happily run a 180mm rear. If you're getting strong brakes, consider this.
You save a touch of weight, and also get a touch better ground clearance, and maybe better feel depending. It all depends on your weight though.
