Fairly simple, seems fancy - Beef Stroganoff.

Elk Stroganoff. We are still eating the Elk he shot in Northeast PA last year. I still have 3 jars left. The good fresh egg noodles are the hard part.

Lots of sinew and grizzle. Hard on the stomach. Kind of nasty. The big flabby pieces were trimmed off. Fat is flavor. But sometimes it's just fat and nasty.

Steak frites, did the tenderloin sous-vide first and finished it off in the cast-iron I preheated in the oven. Blender béarnaise.
