Not much to it. Fries, gravy and cheese curds. Some people use melted mozzarella.
The original poutine recipe isn't very exciting, IIRC, it's a ball of mashed potato with chunks of pork inside.
Maybe put some ketchup on it too, if the gravy isn't enough.
