For hubs, Surly are great. Spot, Phil Wood, Chris King, and others also make fine hubs, but they are a little more expensive. A sweet SS fork for disc users would be the Vicious Cycles fork. It looks great and I've only heard great things about it.

A 2:1 gear ratio is a good place to start.
