esp if you can get the baby bok choy. everyone knows that infants are the most tender.
wash bok choy; if not using baby, cut the stems in ~1" pieces, and coarsely chop leaves. if using baby, leave as is, but trim the root end.
mince some garlic and ginger
heat peanut oil very hot in a stir-fry pan, and add the garlic + ginger
for regular bok choy, add the stems first, and cook for ~1 min (covering can help). add leaves, stir and cook down for ~30 seconds, serve immediately.
for baby, you can cook the entire stuff at once.

phffft - the cabbage of the 80's? So retro... back in the day every greener hippie chick enjoyed the bok choy :)

What the hell took you so long? I remember stir frying bok choy back in the early 90's in college...
Don't use it so much anymore. I should rediscover this retro veg. :D

i've cooked it before... the difference is that a local store started stocking baby bok choy, which rocks.
and it's so damn easy to make, and so damned tasty.

I forgot that crap existed, probably because I OD'd on it a decade or so back. Don't recall ever seeing the baby stuff though....

Dude. I was dirt po' in college. I cooked a LOT of stirfry... in addition to quite a bit of falafel.
