I want to save a website on google cache as it is now so I can prove something in case it's changed. How do I go about doing this?

They just cache sites as they crawl the web. I don't think you can tell them when to do it.

Just save the pages. All you have to do is File---Save page as in your browser and it'll save it as a web archive.
