but you can't wrap a pork tenderloin w/ that bacon, like we did for dinner tonight.
roasted garlic rubbed on it, chopped thyme, rosemary, and whole sage leaves...wrapped in bacon...pan-fried, then finished in the oven.

That's true. The Irish stuff is much too delicate. :)
