If you are going to make your own red chile from dried pods:
Cut the stem end off each chile and shake out the seeds.
Wash them and put 12 large ones in a pot covered with water and boil about 20 minutes.
Put the chiles in a blender and add the water they were cooked in to make 1 quart.
Blend and puree until smooth - it takes a while.
This is better than any of the canned crap.

Firstly, what kind of chile pods are you using New Mexican's or Ancho's or what?
Secondly, after rehydrating them do you remove the puld from the skins or just blend the whole thing?
Thirdly, do you just use this as a base for making chili and salsas?

1. This is for dried NM chiles (Anaheim/Big Jim etc...)
2. You blend the whole pod sans the top stem. However, some folk like to tear off the top stem and pour out the seeds (the seeds are hot!), then blend.
3. This is the base for making enchiladas, chile meats, etc... This will not work as a salsa since it is more of a sauce.

what about roasting?
my boss got a drum-style roaster, and made some great burritos last week w/ the roasted anaheims from his garden.
