Alright, let's hear some of your favorite camping recipes. TN and I will be in NC next weekend and i want some good food to take with us. stuff thats easy but tastes good. Sauages and Beans are pretty much out, neither one of us can handle them. one pot meals would be greatly apreciated. we nedd lunch and dinner ideas.

on the menu already are
whole grain pancakes
falafel
cous cous salad
fajitas/burritos

Don't forget pesto - that's one of the easiest, tasty camp foods there is. Combined with pan-fried garlic toast..... :drool:

I bring marinated forzen chicken breasts. Throw them (still forzen) into a sealed container/bag and add marinade. They will slowly thaw over a few days and keep other stuff in the cooler cool at the same time.
Also Hogs and Noodles. An ironic name b/c it contains neither. Shells, sauce, and cheeze baked in the oven. Can also add ground beef.
And beer :D
