I've been paying a lot of attention to nutrition labels recently. I've noticed that lots of times there are fats and carbs not accounted for. For example - the nutrition label on Fritos says they have something like 10g of fat, but only 1g of saturated fat - what's the rest? Same with carbs... 20g of carbs, 2g of fiber, 5g of sugar - what's the rest?
Any guidelines for when the unaccounted for fats/carbs are good or bad?

Poly and mono-unsaturated fats.
Same with carbs... 20g of carbs, 2g of fiber, 5g of sugar - what's the rest?
Starches and medium to long chain polysacharides and glucose polymers.

Starch is just a lot of sugar molecules strung together. They can naturally occur (starch), or can be manufactured (long-chain bla bla bla) products. They are neither bad or good. They are just carbohydrates in different forms - 4 calories per gram. They are digested a little more slowly than simple sugar, depending upon their structure.
