like to give sunrise a try myself, do you camp there? Or is it a one day deal? Do they have trails for highly UNskilled riders such as myself?

Went up saturday for the first time. It was fuggin awesome. It rained/hailed/snowed some towards the end of the day but had a killer time.
If you're highly UNskilled, you'll prolly hurt yourself at some point, so get some skills first, or at least have full gear with ya. Although there is an easy fire road you could take.
We made the mistake of not staying up there overnight, and it made for a gruelling 4 hour ride back to Phoenix. I dunno about camping. Wouldn't ya want to shower after a day of riding?

All of them.
The lift takes ya up, and there are many ways down. Explore.
Tip: Don't stop for Mexican food on the main drag in Show Low.
