I"m looking to lock out the big two rings in the rear and my big ring n the front. Any idea how to do it?

You can use the limit screws to prevent the der. from moving to those gear combos.
Or, you could just not shift onto them.

In conjunctiuon with the limit screws, you could also re-adjust the amount of cable being let out/taken in to regulate the two deraileurs, and just replace the big ring with a bash guard...or not.:D
